Stephanie’s Pasta Bake

When I’m in a hurry, I throw together this easy pasta bake. A large jar of your favorite pasta sauce can be substituted for my homemade sauce if you don’t have the tomato products on hand.

1 lb of ground beef or loose sausage
16 oz penne
8 oz shredded mozzarella cheese
1 large can of tomato sauce (15 oz)
1 small can of tomato paste (4 oz)
1 large can of crushed tomatoes (15 oz)
1 large onion
1 large bell pepper (optional)
3 cloves of garlic
1 tbsp of basil
1 tsp of oregano
2 tsp of parsley
salt and pepper to taste
dash cayenne pepper (optional)
Tony Chachere’s seasoning
garlic powder

Preheat oven to 350 degrees. Rough chop onion and bell pepper. Mince garlic. Season ground meat or sausage well with Tony’s and garlic powder. Make sure you get your hands dirty by massaging the seasoning into the meat! Then cook meat on medium heat until brown. Drain excess grease. Add onion, bell pepper, and garlic to the meat, and cook until wilted. Next add all tomato products and basil, oregano, and parsley. Add salt and pepper to taste. Add a dash of cayenne pepper. Let meat sauce come to a slow boil, and then simmer on low heat for 15-20 minutes. While sauce is simmering, cook penne according to package directions until al dente. Drain pasta. Place in 13×9 Pyrex or other oven proof dish. Pour sauce over pasta and spread evenly to coat. Then sprinkle mozzarella cheese over top and bake at 350 degrees for 25-30 minutes, or until cheese bubbles. Serve with a side salad and Italian bread. Serves 8.
